Healthy Cookies To Fool Everyone At Your Holiday Party…

I’m going to warn you – you will want to eat 100 of these, but you won’t because they’re incredibly, delightfully filling!

When I make my Banana Oatmeal Cookies, I make a huge batch of the most basic kind and then set out dried fruits, chocolates, raw sugar, coconut flakes, peanuts, and even sprinkles so that people can make their own.

My husband likes to mix in raw sugar and chocolate chips into his because he thinks the healthy ones need more sweetness.  To each their own!

The best thing is that I can make a healthy batch and let my friends and family mix in whatever they want.  One friend put gobs of Nutella and Peanut Butter in the middle of his cookies last year and they were surprisingly amazing.

Here’s the recipe:

Healthy Oatmeal Cookies

(Makes 36.)

Ingredients:

  • 3 Bananas
  • 2 Cups Rolled Oats
  • 1 Tsp. Vanilla Extract
  • 1Cup Olive Oil
  • 2 Cups Rolled Oats
  • 23 Cup Ground Almonds (I use nut grinder for mine)
  • 13Cup shredded coconut
  • 12Tsp. Cinnamon
  • 1 Tsp. Baking Powder

Optional:  Add in Semi-Sweet Chocolate Morsels, Cranberries, Peanuts, Raisins, Dates, Figs, Sunflower Seeds, or, my favorite: extra Coconut Oil to make them seriously soft and creamy.

Directions:

  1. Preheat oven to 350°F.
  2. Mash the bananas in a large bowl, then stir in all the other ingredients until they are all combined.
  3. Fold in your add-ins.
  4. Create cookies about 2 inches wide.  Keep them spaced about an inch apart.
  5. Bake for 12-14 minutes.  Over-baking these will dry them out.
  6. Get ready for your house to smell AH-Mazing.
